For your case I could recommend to create some dynamic dns that automatically updates the ip, or I could create a script with you to easily update the ip every 24 hours ("manually"). I have been configuring firewalls for more than 15 years and since you mentioned Ubuntu server, I assume you are using iptables as firewall and there is a very simple way to handle this problem and you can reuse the solution if needed. If you use other firewalls instead, the solution will be similar but I might need to identify what firewall you are using to provide you the correct configuration.
