Hi, there. I have hands-on experience in building OCR pipeline. To my experience, the most reliable open-source OCR tools are Tesseract, MMOCR, PaddleOCR, and EasyOCR. MMOCR is the best choice for your task because MMOCR models are all based on SOTA Transformers and it supports multiple languages. Even MMOCR supports good APIs for data preparation and custom training. Custom training of OCR-pipeline needs huge dataset. Let me know how much dataset you have now. 1.
