Tassie Brewery is a small Tasmanian owned distillery located in the town centre of Bridport, with a population 7,000. The company produces 60,000 barrels of beer annually. Tassie brewery had a turnover of $5m in 2012. The majority of the 30 employees are employed in sales and the production process.
The brewing of beer involves producing work in a mashing and boiling process in the brewing house from the raw materials, which are hops, malt and water. After cooling, the wort (liquid extract) is fermented. This fermented immature beer is then stored and filtered. The finished beer is then decanted into bottles or pumped into kegs (pressurised containers). All processes are subject to strict standard controls and comply with legal requirements. The supporting infrastructure consists of an energy supply, water supply and treatment plants, wastewater treatment and disposal, as well as facilities for the maintenance of technical equipment and vehicles.
The finished products are stored at the brewery until the company transports them on its own vehicles to their customers. The sale of the finished product is limited to an area within a 300 kilometre radius from the brewery.
The raw materials (malt and hops) are only purchased from farms where no pesticides or artificial fertilisers are applied.
Sustainability management is the management of a company’s activities which have an impact on the environment. Its objectives are to conserve natural resources, limit emissions of pollutants, environmental hazards and create a safe workplace. These economic activities can have a significant impact on the environment.
Environmental activities are used to promote the company to the public, through mechanisms such as press releases and guided tours and by winning awards for environmental activities. Overall, Tassie Brewery has managed to maintain a long-lasting well-balanced relationship with interested parties (eg local residents and authorities).
