So I have some data X,Y,Z.
I want to make a table where X,Y are the axis, and I give it some of the data for Z.
Now the bit that is tricky. My data of X,Y is pretty random. So I want excel to put it in to the nearest number or interpolate the number in the middle.
Example values for the chart: x values - 5,10,15,20,25,30
y values - 0,45,60,90
Data sample values: x values - 17.5,10.5,15.5,22, etc
y values - 50.3,45,38,57, etc
Ideally once I have built the chart with the known z data points the blank data points would be worked out
Any ideas on how to do this or if it is possible?

Are those values mathematically dependent or do you have some ordered data (for example array[array[3]] where 3 are x,y,z values)? If this is not we could have a chart with blank values on the plot either with data normalization or just blank data which are considered null and didn't exist on chart.
I recommend scatterplot given the data structure.

I understand the core concept for your project as ungridded multi-dimensional (2) interpolation, for which there are several methods. This work I've done, for example I produced a program to draw contour plots in diopters of graded bifocal glasses lens using data taken from a coordinate measurement machine.
My favorite technique involves creating a mesh of quadrilaterals and triangles as appropriate. The nodes are at known locations with known `z' heights. Transform to a fundamental element find the standard coordinates of at the desired point, compute the dot product of these coordinates with the known heights gives the height at desired location. This after finding into which element the desired spot fits, known as the cross products of edges with the vector starting edge node to the point all have same sign. This technique is used in finite element analysis, the basis of much engineering simulation software.
