Hello, I'am a electronics engineer with 17+ years of full-stack design experience. The bandwidth of the analog signals would tell us whether analog optical isolation would work for you? I've designed circuits with analog optocouplers that were fine-tuned on PSPICE. They accurately relayed analog signals with 13-bit resolution and 20KHz BW. But your system will have 60 optical isolators in total. This doesn't sound nice because, in general , optocouplers have relatively shorter lifetime. The baud rate and range of I2C is not recommended for such application either. My recommended solution is Two High Speed Small uControllers, with a single redundant opto-coupled communication channel. Regards
