Wordpress theme needs updating ready for PHP 8.1

Hello! I have a Wordpress site retailing using woocommerce. The current theme often corrupts when we update wp or woo or even just the plugins. I am happy to keep the current theme but I think it needs a bit of work to make it future proof and also we need it to be ready for when the [login to view URL] host forces us to update to PHP 8.1.
I would say key points are:
Update to PHP 8.1 without corrupting (currently we can't even enter WP dashboard on 8.1)
futureproof/fix current theme
site speed needs to be much better
mobile optimisation
then maybe some help with other site elements, seo, checkout experience etc.
