My proposed technology stack is Python, because it's perfect for this kind of task. I will use: PySide6 or Tkinter for a clean and simple user interface. The pyserial library to communicate with the gauges via their COM port, based on the documentation you provide. matplotlib for real-time and historical data plotting. pandas to handle the data and export it to a clean CSV/Excel file.
