Shopify - app/code to help with editing orders

I need help with a way to edit orders after they are placed through my website.
Currently, I offer 3 options for customers to receive their purchase: (1) Pick Up; (2) Shipping; (3) Local Delivery. I used to use Zapiet to do this but experienced too many glitches, so I am now using the new Shopify pick up and local delivery features.
I have a lot of customers who email me after they have placed their order, wanting to change their selected method of delivery - e.g. they chose 'shipping' when they checked out, but they would now like 'local delivery'.
From what I can tell, Shopify doesn’t allow me to change the method of delivery directly through the 'back end' of their system. I have tried doing so through the 'edit order' function, however there is no option to change the method of delivery that was originally selected by the customer. Additionally, they do not allow for 'pick up' orders to be edited at all.
I have looked at apps, but I cannot find one that suits (or I don't know how to use the app to make it meet my requirements).
Can anyone develop a simple way for me to work around this or provide guidance, for a fee of course.
