Hi. This is a proper low-noise analog design job, which is my area. A balanced phono stage lives or dies on three things: RIAA accuracy, the input noise at MC levels, and keeping the whole chain truly balanced with no single-ended shortcuts. Those are what I get right first. I would design adjustable MM/MC gain without re-biasing, a tight-tolerance RIAA network with the simulated response plots you asked for, and a fully balanced path to the XLR output with a low-noise supply. You get the schematic, PCB layout, the RIAA sim plots, and a bill of materials.
