Hey, I've been working with Odoo for about 3 years now, mostly custom modules and API integrations. Built stuff for CRM, Sales, Inventory - pretty much the core modules you mentioned. I'm comfortable with Python and the ORM, and I've done plenty of third-party integrations (payment gateways, shipping APIs, that sort of thing). PostgreSQL and Git are second nature at this point.
