Apache/PHP configuration issue

I've just moved a site from a server which died to an exisiting CentOS box which is hosting other sites sucessfully. It should have been a straight copy and VirtualHost setup, however I'm finding the content coming out garbled (source is fine). Appears anything via PHP is affected. Sample output in attached screenshot.
To be successful for this project you will need bash command line editing skills. This is not a cPanel box. I see this as more a systems admin job than a development project so please keep this in mind.
