one question decides whether this is straightforward or a much bigger job, and it is worth answering before anyone quotes: is the hindi in your pdfs unicode, or a legacy font? a great many hindi documents are set in older fonts like kruti dev or shree lipi, where the bytes underneath are actually latin characters mapped onto devanagari shapes. it looks correct on the page and copies out as nonsense, and ocr trained on unicode devanagari misreads it badly. if that is what you have, the text genuinely has to be retyped or run through a proper mapped conversion and then checked. if it is unicode, part of it can be extracted and verified instead, which is faster and cheaper for you. on accuracy, hindi hides its errors in specific places: matras that look close but change the word, half letters and conjuncts, and nukta characters that quietly disappear. a spellchecker will not catch a wrong matra that happens to form another real word, so the file is proofread by a second hindi reader against the source rather than run through a tool. the typing is done by a hindi-literate typist on my team, with my review on what reaches you. can you send two pages, ideally your messiest, so i can tell you which font situation you have?
