Extract Application Data from Server Image

I have a full-disk .img taken from a Linux server and I need the usable information pulled out of it. The goal is to mount the image, navigate its file system, and recover only the files and directories that hold application data, with particular attention to the database stores. If any corruption is encountered, let me know the options before attempting repairs so we do not risk further damage.
